Homemade Carrot Bread

 Here's a simple and delicious recipe for homemade carrot bread:

Ingredients

  • 2 cups all-purpose flour

  • 1 cup granulated sugar (can reduce for less sweetness)

  • 1 ½ teaspoons baking soda

  • 1 ½ teaspoons ground cinnamon

  • 1 teaspoon salt

  • ½ teaspoon pumpkin pie spice or nutmeg (optional)

  • 2 ½ cups shredded carrots (about 4-5 medium carrots)

  • 3 large eggs

  • ¾ cup vegetable oil (can use canola or avocado oil)

  • ¼ cup milk

  • 1 teaspoon vanilla extract

  • ¾ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9x5 inch loaf pan with parchment paper or grease it.

  2. In a bowl, whisk together flour, sugar, baking soda, cinnamon, salt, and pumpkin pie spice.

  3. In a separate large bowl, mix shredded carrots, eggs, oil, milk, and vanilla extract.

  4. Add dry ingredients to the wet ingredients and fold gently until combined.

  5. Fold in chopped walnuts if using.

  6. Pour the batter into the prepared pan and bake for about 55-65 minutes.

  7. Test doneness by inserting a toothpick in the center; it should come out clean or with a few moist crumbs.

  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
